A Chief Cook is responsible for managing kitchen operations, preparing high-quality meals, and supervising the kitchen staff. They ensure food is prepared safely, hygienically, and according to the dietary needs and preferences of the personnel (in camps, ships, hotels, or institutions). The Chief Cook also handles inventory, menu planning, and kitchen cleanliness.
Food Preparation: Plan and prepare daily meals (breakfast, lunch, dinner, and snacks) in accordance with menu standards and nutritional guidelines.
Kitchen Management: Oversee all kitchen operations, including supervising assistant cooks and helpers to ensure smooth workflow and efficiency.
Menu Planning: Create menus based on nutritional needs, available ingredients, and dietary restrictions while ensuring variety and taste.
Inventory Management: Monitor food supplies and kitchen equipment, place orders in a timely manner, and maintain inventory records.
Hygiene & Safety: Ensure that the kitchen and dining areas meet hygiene, sanitation, and safety standards. Enforce proper food handling and storage procedures.
Budgeting: Work within set food budgets, control waste, and optimize cost-effective meal planning.
Quality Control: Ensure food quality, presentation, and portion control consistently meet standards.
Training & Supervision: Train and guide junior kitchen staff in food preparation, hygiene practices, and kitchen protocols.
Record Keeping: Maintain logs for meals served, ingredients used, and kitchen incidents or issues.
Compliance: Adhere to food safety regulations and relevant health and safety laws (e.g., HACCP compliance).
Experience: Minimum 5 years of cooking experience in large-scale kitchens such as camps, ships, hotels, or institutions. Previous experience as a Sous Chef or Chief Cook is highly desirable.
Culinary Skills: Strong cooking skills across various cuisines (local and international). Knowledge of special diets is a plus.
Leadership: Ability to manage and coordinate a team in a fast-paced kitchen environment.
Communication: Good spoken and written communication skills in English (additional languages are a plus).
Organization: Excellent time management, planning, and multitasking skills.
Education: High school diploma or equivalent. A diploma/certificate in Culinary Arts, Hotel Management, or Food Services is preferred.
Certifications: Food safety and hygiene certification (e.g., HACCP or equivalent) is mandatory.
Contract period: Two (2) years
Food: provided by the company.

Accommodation: Provided by the company.
Working hours: 8 hours a day, 48 hours per week.
Overtime: As per UAE government law.
Vacation: 21 days per year. As per UAE law
Medical facilities: Provided as per company policy.
Air passage: One-way free ticket after completing the contract.
Other conditions: All other terms as per UAE government law.
